Creamy Au Gratin Potatoes



4 potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups milk
1 1/2 cups shredded Cheddar cheese


Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.

Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.

In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.

Pour cheese over the potatoes, and cover the dish with aluminum foil.

Bake 1 1/2 hours in the preheated oven.



I don't know if Biker takes lunch to work, but this can be put in a Tupperware bowl and reheated easily.

OPTION: Dice up some ham and mix in with the cheese sauce.

Peppers and Potatoes


6 large Poblano peppers, sliced.
2 meidum onions, chopped.
1 tablespoon of olive oil,
2 1/2 lb of russet potatoes, unpeeled, cooked, cubed.
2 cups of cooked barley.
2 tablespoons of finely chopped cilantro leaves.
1 teapsoon of dried cumin.
Salt and cayenne, to taste.


Saute the peppers and onions in the olive oil in a large skillet until crisp tender (4-5 minutes).

Add the potatoes

Saute until browned (6-8 minutes).

Add the barley to skillet; cook over medium heat until hot through (3-4 minutes).

Stir in cilantro and cumin.

Season to taste with salt and pepper.

This is traditionally served with fried chicken or country fried steak.

Garlic Mashed Potatoes


6 cloves garlic, peeled
1/4 cup olive oil
7 baking potatoes, peeled and cubed
1/2 cup milk
1/4 cup grated Parmesan cheese
(Use the real stuff, not the Kraft in the green plastic)
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground black pepper


Preheat oven to 350 degrees F (175 degrees C).

Place garlic cloves in a small baking dish.

Drizzle with olive oil, cover, and bake 45 minutes, or until golden brown.

Bring a large pot of lightly salted water to boil.

Add potatoes, and cook until tender but firm. Drain, and transfer to a large mixing bowl.

Place roasted garlic, milk, Parmesan cheese, and butter into the bowl with the potatoes.

Season with salt and pepper.

Beat to desired consistency with an electric mixer.

Served with shave roast beef & brown gravy.

(Adjust ingredients for serving size # of potatoes).


2 Idaho potatos
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder


Preheat oven to 450 degrees F (230 degrees C).

Cut potato into wedges. Quarter or sixths as necessary. Smaller slices will get crispier.

Mix olive oil, paprika, garlic powder, chili powder and onion powder together.

Coat potatoes with oil/spice mixture and place on a baking sheet.

Bake for 45 minutes in preheated oven.

OPTION 1: 1/2 teaspoon of Dave's Insanity Sauce in with the olive oil mix for a "bite" to the potatoes. NO MORE.

OPTION 2: Instead of wedges, make silver dollars, about 1/2" thick.




BTW, IG, none of this is fattening. :D

Usually, for au graten cheese potatoes I use Idaho spuds, sliced 3/16" (great to have a food processor) :D I think the Idaho or the northern Michigan white potatoes are the best for au graten.


I'll tell you what I do with red potatoes, and maybe IG will be nice tomorrow morning and make them. I make "Red Pots" for breakfast. (Great with a Mexican omelet.)

Quarter, then cut each red potato so you eight pieces. Microwave them for about 2-3 minutes just to get them soft and cooked inside. Meanwhile, get the oven preheated for 375.

After you have the potatoes out of the microwave, spray on some vegetable cooking oil or just brush on a little butter. Add pepperika, and bake till they start to turn brown and are sizzling.

Alternately, you can use this mix if you want to make them a little spicy.


6 medium Potatoes
4 tablespoons Melted Butter
1/4 teaspoon garlic powder
4 dashes parsley Salt & pepper


Cut each potato lengthwise in quarters.

Stir together melted butter, garlic powder and parsley.

Arrange potatoes skin side down on a shallow baking pan.

Brush seasoned butter over cut surfaces of potatoes.

Sprinkle with salt and pepper. Bake, uncovered, at 400F degrees for about 1 hour or until golden brown and tender when pierced.

Should have looked at the next page before posting the last recipe. This one is great for red potatoes, especially if you have steak or BBQ beef or bird.

I got this from place down in Dallas TX. I seem to recall they were on Valley View Lane by 35E, which may be "Farmers Branch" rather than Dallas.

They serve this or steak fries with their main entre'. Proportions are scaled back for 4 servings.

1/2 cup Shredded Colby Cheese
4 tablespoons Bacon Bits
1 bunch green onions, tops only, chopped
1/2 cup Sour cream


Preheat oven to 350 degrees.

Wash potatoes very well and bake in an oven for one hour. Remove potatoes and allow them to cool.

When potatoes are cool, quarter them, and take a knife an just slit the inside of each potato to allow some of the flavor in.

Grease a baking dish and place the potatoes in the dish skins down, CLOSE together.

Sprinkle the potatoes with bacon first, then cheese.

Bake for 5 to 10 minutes, or until the cheese has melted.

Remove from oven. Sprinkle the green onion tops on the potatoes. Serve with sour cream.
