Ingredients

* 3 1/3 c amaranth flour shopping list
* 1 c plus 2 tbsp arrowroot powder shopping list
* 3 tsp baking soda shopping list
* ¾ tsp vitamin C powder (optional) shopping list
* ½ tsp salt shopping list
* ¼ c applesauce shopping list
* 2 tbsp olive oil shopping list
* 1 ½ c water shopping list

How to make it

* Combine flour, arrowroot, baking soda, vitamin C and salt in a large bowl.
* Mix applesauce, oil and water.
* Stir into dry ingredients until just blended.
* Pour into greased 8 X 4 loaf pan.
* Bake at 350 for 40 minutes. Turn out immediately and cool on a wire rack.

when i tasted amaranth a long time ago...it had a nutty flavor...is quite good, and in california it used to grow wild...so its something than can be free or if you get some just scatter the seeds someplace

if you have a natural food store near by, maybe you could sample some...or buy a small amount to see if you like it
