    New Red Beans And Rice Experiment...

    This is how I'm starting:

    2 boxes of Zatarain's New Orleans Style Red Beans and Rice.
    1 1/3lb left over BBQed boneless pork ribs.
    2/3lb left over corned beef.
    One large diced onion.
    One large diced green bell pepper.

    I'm gonna brown the ribs and corned beef in bacon fat, saute the onion and bell pepper in garlic butter, then combine the two with the pre-cooked cooked Red Beans and Rice.

    I'll let y'all know how it turns out in a couple of hours.

    Good God A'Mighty! That's some fine stuff. Make ya wanna slap yo Mama!

    Having said that, the recipe as it stands could easily feed a small tribe of pygmies for a month. Think I'll halve it next time. It's some filling stuff. After me and Miss IG ate a bowl of my new creation, we were out like lights.

    Only thing I'd change is to add some nice, hot buttered cornbread on the side.

    Oh, BTW, I added a small punch of ground red pepper to the veggies. Oh Lordy, was it good.

    Now, that's a "beefed-up, porked-up variation! I wonder if I can get any natives to try this one. The original usually has only sausage in it.

    By the way, Red Beans and Rice are a tradition on Mondays in the Big Easy. In the "old days", Monday was wash day and the woman of the house put the beans on to cook early in the morning, so she had all day to wash and iron and sweep the front stoop!

    Delphine? Aren't you are resident "Southern Belle"? More like our "Steel Magnolia"! But with any name, got a recipe?

    Oysters eh? At this point, I'll try anything! But personally, I LOVE oysters!

    Hold on! Where you talking about his "night time emissions"? If you were refering to his "other" activities, I'm staying clear of oysters! He's all I can handle as it is!!!
