Now that football season has started, kids are in school, I'm thinking of fall and some good recipes for dinners. How about some chili?
Chili Fest Winning Chili
Gut and cut into strips
1 Anaheim pepper
3 Serrano peppers
1 Jalapeno pepper
Dice up
1 Green pepper
1 yellow pepper
fry them up in the electric frying pan in a little oil until tender on medium heat.
Put in Chili pot with the juice/oil
One can unsalted Hunts
8 oz Tomato Sauce
10, (or is it 12) oz Stewed Tomatoes
Small can of Tomato Paste
3 can of Dark Red Kidney Beans, 2 drained, one with juice.
Dice up a half an onion.
Cook up 1/2 lb diced Chuck Steak & 1/2 lb Ground Beef in a little oil /W diced onions and a little of the green pepper, (not from above) and more garlic salt and Black Pepper than you think it needs. (Use 1/2 cup diced green olives in place of salt for something different).
Seasonings
Some milled black pepper
1/3 tsp Oregano
1/2 tsp garlic powder
1/4 tsp Cumin
3 to 4 heaping tsp of Favorite Chili Powder AND Miami Spice Chili Powder. (2tsp Miami 2 Favorite)
(If you can't find those Chili Powders, then find one that is not red in color and doesn't taste metallic like Shillings, or Durkeys) The browner the better and that has a mellow smell.
1/3 tsp crushed Red Pepper
1/3 tsp crushed dried Chilies
3 shakes from a can of French's ground Cayenne pepper. (or one tsp of Dave's Insanity Sauce).
Put everything in the pot along with a Miller light beer (some people like dark/lagar beer). Simmer for 2 hours.
Chill the other 5 cans for consumption later.

I think I'd add a few good 'chugs' of Daniels into that pot at the end!
