    Kauffmann's Hard Rolls

    Kaufmann's Hard Rolls

    Kaufmann's Roast Beef was a restaurant on Wooster Street in Bowling Green, Ohio. Located just to the west of the campus of Bowling Green State University, they served home cooked meals and fresh breads. This recipe is for a large family gathering.

    • 3 pkg. yeast
    • 3 tbsp. shortening, melted
    • 4 ½ c. warm water
    • 3 tbsp. sugar
    • 4 ½ tsp. salt
    • 12 c. flour
    • 1 c. oil


    Sprinkle yeast in ½ cup of warm but not hot water and a little sugar. Stir until dissolved.

    In large bowl, dissolve sugar and salt in the remaining water.

    Add melted shortening and yeast, stir well.

    Add 12 cups of flour with the oil a little at a time, and knead until oil is all mixed in dough.

    Let rest 20 minutes. Then shape till about ½ the size of your fist.

    Let rise until dough doubles in size.

    Then bake on greased sheet at 400 degrees for about 20 minutes or until done.

    I'm sure I could freeze the individual rolls before the second rising. Take out one or two or whatever to thaw, rise, then bake.
